Formation of Exorphins: Due to enzyme deficiencies in the digestive tract and a weakened intestinal barrier (leaky gut), gluten and casein proteins are turned into peptides called gluteomorphin and caseomorphin (exorphins) before being fully digested.
Crossing the Blood-Brain Barrier: These peptides cross the blood-brain barrier via the circulatory system and bind to opioid receptors in the brain. This binding can lead to lethargy, sudden tantrums, elevated pain thresholds, social withdrawal, and severe brain fog in the child.

Nutritional Deficiencies: Children implementing unsupervised GFCF diets are at a high risk for calcium, vitamin D, fiber, iron, and zinc deficiencies. Bone density and blood levels should be monitored during the diet, and supplemented if necessary.
Overlap with Sensory Selectivity: A large portion of autistic children are selective about the texture, smell, and color of foods. Suddenly cutting out gluten and dairy from a child who already consumes very few types of food can cause severe weight loss and food refusal (resembling ARFID).
